Strawberry Sauce

I made this last night and my kitchen still smells like sweet stawberries.
I followed this recepie exactly from Our Best Bites

(this is actually two batches, I bought another thing of strawberries just to eat but one batch was not enough, at least not in my house)

Venison Pot Pie

Yummy!

Robie loves chicken pot pie and we have a ton of venison stew meat from last year and this year. It is one of the cuts I have a hard time finding recipes for, I usually just end up cutting it into strips and using it in tacos. But this time I got a little creative. I did not follow a recipe but basically made venison stew and put it in a pie shell :)

Venison Pot Pie

stew meat
2 potatoes cut into bite size pieces, cooked
2 carrots, chopped
2 stalks celery. chopped
onion (I forgot to buy one so I used extra onion powder)
2 pks brown gravy mix
2 tbs Worcestershire sauce
onion powder
garlic powder
pepper
2 pie crusts

First cook the meat with the onion and garlic powder, pepper. Add the Worcestershire sauce, celery, carrots and onion. Cook until just tender. Meanwhile make your brown gravy, I started with just one pack of mix and it was not enough so I made up another (I guess it depends on how much you can fit in your pie with all your other stuff :).

Add all your ingredients together and stir to cover, put in your pie plate and top with the second pie shell, be sure to make slits in the top for steam. I baked my at 425 for about 30 mins or until the crust was nice and brown. Enjoy!!

Buffalo Chicken Pizza

Yum! If you know me you know that I love hot spicy things, especially good bone in buffalo wings (there really is no other kind). Tonight I made a really great pizza, I can't give you a recipe because I didn't follow one, I just kinda made it up as I went along, and I don't measure things.

I used a packet of quick pizza dough that you just add water to and cooked up some chicken. For the sauce I mixed light ranch (don't tell R) and Franks Buffalo Wing sauce until I liked the flavor and dumped it on the crust (dumped as in I LOVE sauce), sprinkled shredded chicken, mixed pre-shredded Italian cheese and olives on top and baked according to the directions on the crust, and Voila!!

No Bake Cookies

Oh yummy yummy summer food! I love to BBQ, R has not even used the grill his Dad got us for our wedding two years ago, I won't let him touch it :)

Tonight I grilled up juicy burgers topped with melty cheese, crunchy warm bacon and juicy pickles....oh my mouth is watering all over again. I was going to take an after picture but... uh forgot.

After that settled a little I made what is probably one of my favorite cookies of all times. I don't know if it is because they are chocolate and peanutbutter, or because they are soooo easy to make. I have probably talked about them before but if you have not tried "No Bake Cookies" you are missing something.

No-Bake Chocolate Oatmeal Cookies

2 C Sugar
8 T Butter
1/3 C Cocoa powder
1/2 C Milk
1 t vanilla extract
1/2 C Creamy or crunchy Peanut Butter
2 1/2 to 3 C Rolled oats (not instant)

In a medium saucepan, combine the sugar, butter, cocoa, milk and vanilla. Bring to a slow boil, and simmer unitl the sugar has dissolved.
Stir in the peanut butter.
Remove from heat and stir in 2 1/2 C oats. The mixtures should be thick, add remaining oats if nessicary
Line cookie sheet or counter with parchment paper. Drop the mixture by the spoonfull onto the paper. Let cool and ENJOY!

Peanut Butter Cookies

Let me just say YUM!! These cookies turned out amazing! I found the recipe over at Our Best Bites they taste as amazing as they look! My filling was a little runny but tastes great.
The only thing that could make them even a little better is if you were to add chocolate somehow. Maybe a chocolate cream in the middle? Or half dipped in chocolate? I don't know yet but I will figure it out!

Breakfast Pastries

I have been using the recipe for some time, they are quick easy and easy to take to work and reheat. This makes 4 total, I usually double the recipe if I want any before R eats them all.

1 Tube crescent rolls
4 Oz cream cheese
2 T sugar
Berries, jam, or chocolate chips

Unroll your crescent rolls keeping them in rectangles, you will have 4 total

Mix your cream cheese and sugar together and spread evenly on the rolls, about a 1/4" from the sides. Spread your topping over the cheese mixture(I used homemade raspberry jam my Grandma and sister made this summer from fresh picked raspberries)

Fold in opposite corners and pinch together. Place on an ungreased cookie sheet and bake for 11-13 mins.

Ham and Cheese Pockets

After practice with the girls last night I made these up to snack on while baking two pumpkin pies and a cheesecake for Christmas dinners.

One tube biscuits
4 OZ cream cheese
2 T milk
1 C diced ham

Preheat oven according to package

Mix cream cheese, milk and ham in bowl and set aside.

My biscuits had 8 in a package, I pulled them apart, then separated them to make 16 pieces total

Spoon the cheese, milk, ham mixture on 8 pieces and cover with their 'mates'. Pinch the sides together and place on an ungreased cookie sheet.

I put mine in for 11 mins and that was not long enough, and I forgot to set the timer. I would say they were in for about 15 mins before the tops turned golden brown.

Quick, easy and delicious!!

**Update** R reheated the few that were left over the next day for lunch and said they were soggy and terrible. He thought they would have been better cold.
